When doing an AXON award can I do more than 5 nights and get all the nights for the lower rate? Or is it just for 5 days?

Neither. AXON is for multiples of four days.

Gotcha. So it has to be either 4/8/12 etc.... Can it be 8 days on one reservation, or AXON is a four day stay period?

What is your question? Search on HH and see how much the hotel is charging per night.

I guess I'm looking for an award chart. Everything I found so far just says 20K-50K a night, etc. Searching on the site for specific dates comes up with crazy number like 31,476. It also seems like every level of room can be booked with points just with more points for better rooms - again with random amounts like 54,326. Is there any seder to how it works?

I believe there is usually a set price for the standard room and other amounts for different classes.

Yes and no.

There is a range of prices for standard rooms, i.e. 70-95K, depending on the time for which you're booking (e.g. peak/non-peak).

Premium rooms can also be booked, but will cost (sometimes significantly) more and be based on the underlying revenue rate.

So, if I see a standard room for my dates at let's say 42,376 points. Does that mean it's the set rate for that night/time of year? Or is it like seeing Saver vs Standard award space on DL.com - unless you know that the flight can be cheaper if Saver was available, you won't know because the site just lists the price but doesn't break it down like UA.com does.

A standard room will not cost an odd number of points.
