You can only book once the miles are in your account. Amex transfer in a couple days. Starpoints, up to a couple weeks.
There is always the risk that those seats won't be available once your points post to your ff account but that's part of it.
If you can advance enough points from Amex, it may be wise because seats are much more likely to stay available for a couple days then a couple weeks...
