rather use the MR for transfers into SQ for 30k in UA J. Great value

Correct but we only need them for 1 specific date each year where they almost never have J class availability on UA, so looking for coach awards as well. I saw that 20K Amex will get you a RT coach ticket from West Coast - Hawaii. Is there anything else like that, or would I need 25K ticket from East Coast - West Coast plus 20K. I know 35K Amex will get me United coach via SQ.

for travel on HA from JFK-HNL its 35/80 Y/J + $11.20

80,100 Elevate points (1 RT in J) costs now 106,800 MR. (vs 60k via SQ)
35,100 Elevate points (1 RT in Y) costs now 46,800 MR. (vs 35k via SQ)

not worth it IMO

A sweet spot though seems to be via SQ J JFK-FRA for only 80,000 MR RT (which become 60k VX) + only $147 (cheaper than booking with SQ direct + the discount online)
