I totally respect that. I just have a hard time relating to it personally since it's not something that would enter into my decision about what flight to take. No, not even on a Monday or Thursday or Rosh Chodesh.

That's correct, but you can still daven with minyen even if you're seated.

When I was serving my 11 month sentence at the Omud, I flew to Eretz Yisroel with a long stopover in London, so I could daven Shachris, Mincha and Maariv and then continue without any need to daven on a plane.

I'm actually not such a fan of those minyanim. Rather, I like to schedule my flights so I can at least get shacharis in Shul. Currently, the only flight which lets me do that ex-NYC is LY 4.

You can find Minyanim in Israel until noon.

Also LY 28 from Newark is also am option for you.
