I don't know what he means, but it may be psychological. 
A chumra restricts your behavior. either poor me, I'm deprived, or I'm so holy, look how much I give up for Hashem.
A hiddur enhances the way you do the mitzvah.  You're doing more for your bond with Hashem, because it matters so much to you.

That's what true connoisseurs use! Once you try it, cooking/frying with oil just doesn't cut it. If it wasn't so much work and $$$ we would use it year round.

Basically my someone (a rosh hayeshiva) went down to the factory and found no jews and goyim running around doing whatever (literally) they wanted. He couldn't imagine that anything was still kosher.

1, he obviously told people because my father knows, 2, hes not the type to start arguing with whichever ruv gives the hechsher.
It's not just a issue here, it happens often that when a company or store is under jewish ownership the maskichim are less makpid on coming in and doing real inspections.
