I have a chumra to  gebruk.

I doubt whether you are makpid on that to the extent it is done in Lubavitch on Achron Shel Pesach! Though in Lubavitch the term Chumra is frowned upon (which is why I could never get myself to eat from a dairy brand called Machmirim) It is a Hiddur.

What about your roof-
Do you make sure to seal it well from any leaks?
Because if the roof leaks onto your matzo you're basically eating chometz,
It's like you're not makpid on gebrukts at all.

If you are mehader not to have Gebruks until Achron shel Pesach, any time you place matzo down on the same table you're eating at, it is very likely that it'll get wet, or drop crumbs onto the wet food on the table and it may get eaten by mistake. (Maybe even a Psik Reisha, esp. If there are kids around)

Therefore keeping it in a zip lock bag is the norm.

However, it is highly unlikely that your roof will suddenly leak over the meal. And if it did, I highly doubt any wet matzo crumbs will end up in people's mouths.

And if you eat by a Lubavitcher on Achron shel Pesach, you'll see we pretty much make up for missing it a whole yom tov then.

I don't bruk, and I don't keep matzah in bags. If it gets wet, I don't eat it. There's certainly no concern of באל יראה

I've seen people eat the matza on a napkin & just fold it up when they're done.
Is using a bag because of bruk or not to put it on the same table that they use all year ?

The bag thing is not about the Matza getting wet, it's about the crumbs falling all over and those crumbs becoming gebrukt.

I don't think the bag thing started in Lubavitch (the Rebbe clearly did not use a bag, nor do I think anyone else did at the Rebbe's Seder). However the bag might just be a practical thing, especially with small kids around.

Umm, no, OP clearly said at the very beginning that he and his wife do NOT keep most chumras. That's actually what gave me a bad taste. If it were self-deprecating like you are trying to make it out to be, that would be different. But it's not.
