What about your roof-
Do you make sure to seal it well from any leaks?
Because if the roof leaks onto your matzo you're basically eating chometz,
It's like you're not makpid on gebrukts at all.
Careful what you suggest, this being Pesach someone might take it seriously! :-)
To answer your question:
If you are mehader not to have Gebruks until Achron shel Pesach, any time you place matzo down on the same table you're eating at, it is very likely that it'll get wet, or drop crumbs onto the wet food on the table and it may get eaten by mistake. (Maybe even a Psik Reisha, esp. If there are kids around)
Therefore keeping it in a zip lock bag is the norm.
However, it is highly unlikely that your roof will suddenly leak over the meal. And if it did, I highly doubt any wet matzo crumbs will end up in people's mouths.
And if you eat by a Lubavitcher on Achron shel Pesach, you'll see we pretty much make up for missing it a whole yom tov then.
