i just chatted with another Amex rep who reviewed the mint coin charge and said it will count towards one's sign up bonus as it is NOT considered a cash equivalent/ advance.

given this why is everyone so afraid of using their Amex and meet their minimum spent? has anyone had negative experience where AMEX clawed back their bonus months later because of a coin purchase?

no-one here said it was a counted as such however amex revised their T&C effective jan 15 2021 to include it as a CA so its just a matter of time before they start enforcing it...

So just to understand for next time, when the mint releases a coin, not everyone gets it right away? If you get it at like 12:05 it can be backorder and come in November?

It was then stated on the product page that's its a backorder, and even if it was already in the cart there was a message in the cart that's it backordered.

Mine did not say backordered when placing the order- it switched to that yesterday evening.

can someone tell us the pros/cons of getting the mint coins graded by a dealer and then selling them with the grade? is there a element of risk in doing that?

It's not necessarily that you'll get the highest grade, so the final value really depends on luck.
