I usually sell coins in person so I don't have experience with this, but when buyers offer a shipping label and payment a couple of business days after they receive it, are there any options for sellers to protect themselves?

Not really, if it’s a reputable buyer they can probably give you references of people they’ve purchased from for much higher amount than you’re selling.
