I clean my skillet with soap and a sponge

The oven is sort of like sous vide'ng it and sear.. surprised no one here said sous vide

I dont think a steak should be cooked the same way each time nor any food for the matter...

Agree but its hard to depart from tried and true practices.

I grill on a offset heat (around 250) till steak is around 125  inside then reverse seat on open flame try to use the hottest part of the grill. Keep flipping so not to cook the inside take it off at 130-135 for mid rare. I believe I got this method from amazing ribs.com

Truth is there are like about 8-10 standard methods and I can't say which is superior, the thing is I'm not disciplined enough nor do I butcher source to get the same cut, age the same way. Prep and grill 8 different ways but I'd love to see serious eats do this.

I like a charred outside and pink juicy inside, very hard to achieve without very serious heat, commercial grade stoves achieve this and I have wealthy friends that have insane kitchen set ups for commercial grade searing.

Alternatively, tiera sur uses bottom heat coal and side heat wood

You had an issue with the charcoal or something else? Need very good quality charcoal.

I think I didnt let the coals get hot enough.

Use to cook steaks on red hot rocks. Not the best looking steaks but they tasted good.

It's called a dirty steak I've tried it once was camping and after sitting by the camp fire for a couple of hours and a lot of beer I mentioned to the guys of such a thing of cooking the steaks directly on the coals so we tried it maybe 2 min on each side fire was so hot I needed to flip them with a long stick. Was sick.
