Souis vide method is great for steaks although its relatively quite time consuming
I put a dry rub of basic spices, souis vide (1-2 hours depending on a size, temperature etc), then sear in pan and it tastes great

Do u spice before u cook or only for the sear?

Before
Will add salt either right before or after searing

If you are in Pheonix, you can simply leave the steak on your porch for a few hours.
