Why do you say thAT? why cant we have the siyum before we start- say 11:45am?

Perhaps you can arrange that but will you be able to get in with enough time to eat before the games start? Will they give you your food before the scheduled time?

Maybe you are suggesting doing the Siyum right away and eating later in the day, that would work assuming you are allowed to do it halachically.

Just to clarify; last year from the time they opened the gates and completed the registration until first pitch was just a few minutes long and we didn't see the food until later.

I am not saying it can't be done, only  that you will need planning and determination to (perhaps) pull it off.

I think you are misunderstanding the whole concept of a siyum during the 9 days. It is not that once you have a siyum you may eat meat. The siyum is a way of making it into a seudas mitzva which can then mean that some hold you may eat meat. You are bound by the halachos of what will be considerd a part of the seudas mitzva. Having a bit of beef jerky outside and then going in is not likely to qualify.
