How does it work? Is it something you requests or they monitor your account and then they contact you for verification?

No. There are allot of from Jews verified, depends on what they do or status in Twitter they are, such as a reporter or how "big" they are. You cannot request Twitter, they will find you if they are interested. (Is Ivanka called frum?... ;D)
