I haven't found anything that tastes as real as Raskin's. No gluten and not much else other than fish.

I believe you're wrong about that. I think you might be confusing Raskin's and Shabbos Fish.

I never understood latkes and applesauce.

The closest analogy would be potato kugel and applesauce. It is very wrong.
