Its been over a week since i applied for GE and it still says pending review. Does it usually take this long?

I did it about 2 months ago and it took about a week and a half.

Global Entry is not something you add to a ticket. If there are global entry kiosks and you're enrolled you can use them.

I was just approved for biz platinum, I am flying with DW and 3 kids on Friday for RH and then on Wed, any chance of getting GE (more importantly TSA precheck) for either of these flights?

After you apply and pay the fee it can take anywhere from a few hours to a week or more to get the approval.

Then you just need to set up the interview at any location.

As soon as you walk out of the interview youre good to go.

They usually send the biz plats expedited.

But if approved today, you probably wont have it until Friday.
