House cured Gravlax

Been envious of ZAK gravlax... decided to make my own.. first batch was ok but needs more salt.. used salt, suugar, dill, cracked pepper.

any one else cure ?

How kosher is this place, I find the following statement on their website odd:

WHOLESALE
Baked Fresh Every Morning
– 7 days a week delivery
I've been waiting over 5 years with bated breath for someone to say that!

I've made gravlax many times. 2 parts salt,  2 parts sugar,  1 part pepper.  Pile of dill.

Key is using high quality salmon.

I stopped making because it wasnt actually cheaper.

I dont think they bake shabbat but maybe they just offer saturday delivery
