I got approved for a SouthWest Visa Signature card with a $2k CL by moving over $1k from another card. Does that count, or does it specifically have to be SP?

If your sp has a cl of 7k, you can move over 2k to another card. - but not a dollar more than that.

In summary; you can move credit from your sp as long as it won't cause it to drop under 5k.
This  specifically only applies to sp.

Why did you have to move 1K over? they told you the minimum is $2K?

AFAIK all Visa Signature's have a min CL of $5K, unless of course, you say you have one with $2K?!

They wouldn't approve me until I got a recon rep who closed an old card that had $k CL on it. When I got the SW card it had a $2k CL, not sure why.

But you've never heard of a SP without at least $5K, have you?

I'm confirming that the sp can't exist without a 5k cl. It can't be opened with less then that and it can't be lowered at a later time to less then that.

OTOH, I have the CO OPP now with a 4k limit. So I would to confirm as AsherO already mentioned that it can be dropped to under 5k at a later time. I cannot confirm whether or not you need 5k to get it approved.

Btw, a bit OT, When I had my CO IPP cl dropped from 5k to 4k I lost some benefits. E.g. primary CDW, return protection etc. See this thread

Really? That's interesting.  Then I guess its YMMV. The recon rep I was dealing with said its not possible for that to work.

I tried to move part of my sp cl to get a new card approved and the recon rep said the sp can't be lower than 5k. (My sp has a 5k cl and therefore none of the cl could be moved.) just my experience.

When exactly is the 7% bonus paid?
Is it on a set date? or the January statement closing date? or is it February?

This card has proved to be very lucrative for me, I got the card mid Nov. for the 3k spend requirement I bought 6 iPhones for someone who resells them, I bought it on Nov. 25th through UR mall and then saw that they had a promo for 10x points on Nov. 28 so I called up and said that if I would have known I would have waited... In the end they gave me the points as a adjustment, I just got my UR points for December And they gave me the standard 2x bonus for apple purchase through the Ur mall.
So I ended up getting 13x the points for the iPhones so 6 iPhones at $649=3894 x13 =50,622 that's on top of the signup bonus

You might be right, and I hope so. But 3 senior specialists confirmed me otherwise. I hope that they don't know what they are talking.
BTW, look at your statement, and you'll see that even points transfers show as "courtesy adjustments", but I guess time will tell, just another week.
Perhaps speak to another 3 Senior Reps and you can be sure we wont get the bonus for them.

my chase account online does show my sp with a 3k limit so clearly it is possible although i'm not sure if the csr knew what type of account she was taking from as she only referenced the last 4 numbers and she was part of the business card recon team

You did pretty well, officially UR mall will only credit 2 iPhones a month
