You really should seperate El Al longhaul from El Al short/medium haul. They are really two different ballgames altogether. El Al has a very competitive hard and soft product to Europe (including Y, with 32" as opposed to 28-30" on the rest) , as well as top notch redemption opportunities and availability, with seasonal point discounts.
Also, you really should not expect a ridiculously posh business class product - that kind of over-the-top excess simply isn't part of Israeli culture like it is in the Gulf, for example (save for the top 0.5%, who are out of touch with reality at any rate).
But I still feel like your refusal to fly El Al stems from something else, more deeply rooted... It really borders on neurosis. You're willing to bring your own kosher on other airlines or fly other lesser quality business products - but not El Al. Over a lousy inch or two of seat width? And flying 2-3-2 Turkish is fine?
Really don't mean this to sound offensive, but it really isn't right to bash so much with 0 personal experience. And as the others have said: plenty of positive stories for all the negative. Personally, I've only had good experiences in both Y and J.
