It seems like the more interesting things at the Forth Worth Stockyards (e.g. rodeo, wild west show) are only on weekends, does it make sense to go with kids on a weekday?
Is there a better (free or low-cost) family activity in the area?

Yes. And DAL is also an easier airport to fly in and out of IMO.

What are the differences between the two communities of Dallas? North eruv and far north eruv? Which one is bigger? More yeshivish?
 And how far are they away from each other?

I went to Dallas and I was told that there is no Hotel within walking distance to the Jewish Community. I stayed a few nights at the The Westin Dallas Park Central and a few days at the
Sheraton Dallas Hotel by the Galleria. They are both nice and they are both a Five minute drive to the Jewish Community. I Shul will find a host family if you want to go to a family for shabbos.

i checked out dallas chabad and there seem to be several hotels within walking distance
