It seems like the more interesting things at the Forth Worth Stockyards (e.g. rodeo, wild west show) are only on weekends, does it make sense to go with kids on a weekday?
Is there a better (free or low-cost) family activity in the area?

Yes. And DAL is also an easier airport to fly in and out of IMO.

What are the differences between the two communities of Dallas? North eruv and far north eruv? Which one is bigger? More yeshivish?
 And how far are they away from each other?

i checked out dallas chabad and there seem to be several hotels within walking distance
