I stayed in Dallas a little over 4 years ago by a big DDF family.  The community is great; we davened by the yeshiva, chabad and the local shteible, you don't get the same kind of friendliness in NYC. The one restaurant we ate by was in the front of a makolet owned by a chabadnik; the shwarma was very good.  The city itself is very nice.  My friend and I J walked while we were in the downtown area, and the sheriff of the police department pulled up in his car next to us and politely said, "perhaps you guys should use the sidewalk next time."
The 6th floor museum is a must see for history buffs and people who are interested in the JFK assassination conspiracy.  We also walked through the city and took a trolley ride.  The winds were so brutal there, so unexpected coming from New York. 
We went to Dallas Cowboys Stadium, a must see whether one likes football or not.  Motzai shabbos we went to a Mavs game; fans there are so much fun. (I took a trip to Philly two weeks later and went to a sixers game, I felt like I was at a funeral). On my way to the airport, we went to the shooting range.  I thought shooting a gun would be an exhilarating experience, but it was just eh; perhaps I didn't use the right gun.
Dallas is a fun place, I would love to return one day.

I don't feel like writing an actual TR so I'm just gonna list what I did and say whether or not I'd recommend it. I'm also gonna list things that looked interesting but I didn't get a chance to do.

Dallas Symphony Orchestra -  Good, if you like music. I happened to have seen a concert of Oscar winning movie scores which was right up my alley as a music lover and a movie lover.

M-Line Trolley - Its cool to see the old trolley cars and if you want to use it to get around certain parts of town it can be nice, but I didn't enjoy it as much as I'd hope I would.

George W Bush Presidential Library - Awesome. I am someone who is interested in history and politics, someone who doesn't care about those things might not enjoy it as much.

Frontiers of Flight Museum - Nice museum about the history of flight and has some old planes at Love Field. Similar (although much smaller than) the Steven F. Udvar-Hazy Center annex to the Smithsonian Air & Space museum outside DC.

Sixth Floor Museum at Dealey Plaza - Very good, my only complaint is that you can't take pictures. I hate museums that don't let you take pictures. I did get pictures of the Xs that mark the spot where JFK was shot since thats in the middle of the street and not part of the museum.

Globe Life Park Tours - I've been to a bunch of stadiums and I think this was the least interesting one (especially compared to the one I did next). There was nothing special about it.

AT&T Stadium Tour - Amazing, its literally one of the most amazing buildings I've ever seen. An absolute must!

Old Red Museum of Dallas County History & Culture - Ok. Small museum about the history of Dallas. Not at all a must but not a waste of time.

DFW Gun Range & Academy - I wish NY could pass reasonable gun laws...

The Economy in Action @ Federal Reserve Bank -  Not very good. Small exhibit in the Federal Reserve Bank about the economy. It might have been more interesting for kids or people who don't understand the history and workings of the economy, but for me it was a waste of time.

Dallas Holocaust Museum/Center for Education & Tolerance - Interesting small Holocaust museum. Had a nice exhibit on Anne Frank.

Reunion Tower GeO-Deck - Not good at all. There isn't much to see in Dallas in terms of skyline or natural beauty so there is really no point in paying to go up into a high tower to see the lack of skyline.

Perot Museum of Nature and Science - I wasn't a fan, it seems like something kids would enjoy more than adults. My City Pass included admission to a 3D Movie so I saw one on space, but it's not something I would have paid for.

American Airlines C.R. Smith Museum - Very good. Interesting museum about the history of American Airlines.

Didn't get to do:
Tours and Recitals of Morton H. Meyerson Symphony Center
American Airlines Center Tours
Bureau of Engraving and Printing

Excellent high-end college prep elementary school, Akiba: http://www.akibaacademy.org/
And, Yavneh High School, both on the same campus. I've toured there and know several graduates. Excellent schools: http://www.yavnehdallas.org/

There are also more Yeshivish: http://texastorah.org/  and "bais Yaakov types" http://www.mesorahhighschool.org/,
however I don't know much about them. All seem to have great community support. Great houses with pools, too, depending on budget, etc...

I went there before I was married.  The area I stayed in was probably the more frum of the 2 areas

The Asian food from Meat Point is good and easy to eat in-flight or at the airport.
