I'm sure Amex is very happy to have cards paid way before the real due date.

On my most recent plat card they offered me the option to not have to pay in full and use it as a CC with min payments for up to 35k, first time I heard of this. is this standard?

I got that offer, and later they offered it to me again, this time with 10k MR if I accept. Maybe wait till they offer you that.

Did they change the "please pay by" date to the due date? As i remember seeing somewhere they could charge a late fee if not paid by then

No. It still says "please pay by" which means almost nothing. One rep told me, "It's a reminder to send out your check in the mail." I find it annoying that I need to log in online to check when my payment is actually due.
Memories last forever, make them while you can.

I'm pretty sure they changed it a few months ago

Personal cards now have a due date, which is 5 days before statement closing, iinm. Business cards haven't changed.
