It's not enveloped when in an oven. Where as in a sous vide its submerged in the water.

Not sure, but perhaps the diffrence (if there is one) is that in this case the water can be considered a machol, just like a potatoe in your chulent is not hatmunah.

Is leaving it in the pot without the sous vide working also a problem of hatmana?

Place in the oven at a low temperature. In water should be okay without the machine on.

A friend of mine works in the ou. He is working with the heads ofnkashrus/halacha or something like that there to put together a sous vide halacha book/publication.
He is bringing in 4 or 5 the of the most popular ones (joule, anova, etc) bringing in pots, food, etc and working with them to get an official ou answer to much of these questions.
Coming together nicely. Aims to have it out in next month.
Any specific questions he should get addressed? They are addressing kashering, use on shabbos, and all that those topics encompass.
They looked at the joule, anova, sansair, and Nomiku WiFi.
