My Gmail was overloaded i spent hours trying to find a solution for precisely this "delete unwanted attachments but retain the messages"
The tech blogs all say Thunderbird or imapsize, they both kept on crashing on me and then I discovered SlimBox !

This one allows you to keep the email and delete just the attachment. that's the whole point

For some people this would be better like you explained, but for me I strongly prefer to solve the problem without  "another" program. If 50 emails each with 20mg attachments of stupid pictures you don't need, you can free up a gig.
