Tough call. You can try to complete the spend as close to the statement close as possible, that way hopefully the bonus won't post until the next statement.

I guess that is my question. If I complete spend after Dec statement date do points post right away or with Jan statement?

I want to sign up for both southwest cards. Should I call them and ask them to cancel sapphire and transfer money limit to there? Or apply for both online first?

Just apply for both. You can do. Them both at once if you want, but doubt it will make a difference
