Everyday Secret Restaurant Recipes Master Thread

Do people here have any experience with these fancy recipes?  Are they indeed as good as when they are served in the restaurants?...

My wife is making the Short Rib sliders from Tierra Sur and the sauce calls for 1 and a half cups of apple cider vinegar. Anyone actually made it? Sounds wayyy too much apple cider vinegar. Its baking now and has a very strong smell....

My wife has made tacos from reserve cut, 'twas amazing!
And many others, most were great.

But seriously? A cup and a half apple cider vinegar? Ewww. That probably killed it. Unless this is the way it's good when they are sliders as in buns with the onions etc. That can make sense but why do they write its good just on its on. 5lbs of short ribs in garbage  :(

It does make sense. Braising meat in equal parts vinegar and some other liquid like water or a Juice is very common.

I have tried a few and they came out okay but not as good as in store which made me want to go to store instead of patchka-ing with the recipes. That was probably wwhat the restaurants were hoping for when they gave them the recipes in the first place.

Well...no. But I have cooked with that amount of vinegar before and haven’t had a problem. Not sure what to tell ya
