Activities: Toledo - a day trip from Madrid to see 2 old Shuls. Can hire a tour guide (his contact info is somewhere in the thread), which is not cheap, or can take a train on your own. 1 of the Shuls (El Transito) is closed on Mondays. @Yehuda went on a day when that Shul was closed, and the other Shul was really just an empty room and seemed like a Christian organization now runs the center. Without a tour guide, it was hard to get anything Jewish out of our trip (other than an antique store that had some Judaica). But, people who have taken the tour (discussed in the thread) have said it was great! Recommended to go with a tour or not go at all (and ensure to go on a day when both are open!). Report in the thread that the sometimes-closed Shul has audio headsets for use, so that would help.

Best way to get around anywhere in this country is by scooter. It is safer driving them there since they outnumber cars by great proportions.

So what's the skinny on kosher in Barcelona ( restaurant and supermarkets?) Is there anything other than maccabi if I'm looking to take some food to go...

I'm not sure about the kosher stores on the Costa del Sol, but you can buy all you need in BCN.

I recall that both Yehoshua and @yehuda have advised to allocate ample time for site seeing in Gibraltar. I am wondering how much site seeing we would be able to do on Shabbat. Specifically, can we walk up The Rock? It would be ideal if we could walk up and down the Rock on Shabbat afternoon. Is that feasible?

I think that you can technically walk up the rock, but it's quite a hike and not a very good activity for Shabbos. You can do a lot of sightseeing on Shabbos that involves walking assuming it isn't too hot or rainy. The eiruv covers a large part of Gibraltar but not the whole thing including near the lighthouse. We spent Friday and going up the Rock and found it to be more than enough time. If you wanted to do other things like the Dolphins, which @Yehuda said you could skip IIRC,  you'll need more time.

+100 that's the usual way to do it. Skip the hike up, unless you wanted to go the stairs on the back side just for their own sake.
