Is tk a decent product in coach for a long haul? How does it compare to thai or el al coach?
Definitely. Read my TR about it here: http://forums.dansdeals.com/index.php?topic=8526.msg992360#msg992360

7k?  Wow.  In any case, I'm almost 100% sure that you will be fine with 2 checked bags.  I've never heard of an airline that doesn't allow 2 bags on international itineraries for passengers flying up front.

Aside from that, I fly Turkish in coach pretty regularly and theyre one of my favorite airlines.  Great service, comfortable coach seating, and some of the best food I've had in coach as well.  They also used to have free wifi, but they started charging for it now.

TK to open a lounge for all transiting passengers - even in economy.

HT: OMAAT
Wow! This is great. If only other airlines (ahem, ua) would learn from TK

Does Turkish ever release long haul biz award seats? Looking for IST-SFO can never seem to find availability.

Tallis and tefillin in front seat in coach before flight (I daven vasikin and that's just how it worked out) from Istanbul. No problem. My wife took a pic; thought it was hilarious. Read my full TR about Turkish Airlines in this thread. It's a great airline and Istanbul was more like Miami than what you  might imagine it to be.

As far as what time to put on tefillin, as I said, I usually daven vasikin, which makes it pretty simple: daven when you see the sun. In any case, you certainly are allowed to make a bracha once you can see the sun (actually, well before that at misheyakir). Here is a tool to approximate zmanim for air travel: http://www.chaitables.com/chai_air_eng.php?look=20150810
I would try to daven as early as possible since time can move pretty quickly. For your trip, depending on when you go and whether daylight savings is in effect, you could be talking about a sunrise of about 3:20am (departure point time) and Sof zman krias shema of about 5:18am. Basically, don't cut anything till the last (or, in this case, even the first) minute. Sunrise is the easiest thing to determine if you're in the air above the clouds.
BTW, I don't think the 6:30 landing time is a true +1 since you're leaving at 1am.

I have Priority Pass and I'm going with family for Yom Kippur/Succot to Israel with Turkish.

I have a 3.5 layover both directions. What is the best lounge I can use in IST?
Also how many people can go in free and how much do they charge for extra people?

We used the Primeclass lounge and it was fine. Not sure about the other lounges there or how the Primeclass compares with lounges from around the world. All I know is I had wifi and comfortable chairs, free drinks (incl beer, water, etc.), showers, a room for my daughter to play in and the people were very nice. It is a bit of a pain to find it, however, and most of the people there had a hard time with English. Basically, you go to where the main hub of outlet stores are, you hang a left down a large corridor and you go down an escalator or elevator one flight. You can ask around there and people will try to be helpful but they just don't know English. With the Lounge Pass card that came with my Chase Ink, I got a separate card for each card-holder and each card allowed one person plus a guest with children under a certain age being free. The details should be in your signup brochure or you can call them.

Thanks!

My pleasure! Enjoy. I really enjoyed Turkish and the airport with the lounge access was great. If you haven't already, and this is your first time on Turkish, make sure to read my TR earlier in this thread. Most importantly, enjoy Eretz Yisroel!
