There see places, see my TR, but the nicer places are all drives, like Isle of Skye and other places far from the big cities.

I imagine the kosher store in Edinburgh has. They also deliver fortnightly to Glasgow if you needed to pick up the food there. They can deliver on a different schedule, but you will need to pay for it.

Isle of Skye is stunning, but as noted, extremely far. We spent a day there and then 2 in the Highlands. Lots of extreme stuff to do in the Highlands, including white water rafting, gorge walking (
one of the coolest, funnest and COLDEST things I've ever done), canyoning, etc.
Life isn't about checking the boxes. Nobody cares.

Why don't you just go to shul for lunch and get food heated up for Friday night from your hotel (if you take in shabbos early)? Si much cheaper and easier.

Get travel meals from the kosher store in Glasgow, they will arrive frozen, and you can heat them up in the hotels' ovens.

2) Is the ferris wheel that is opened in the summer in the city center of Glasgow? Or just holiday season?

Toured Edinburgh and went to the military tattoo (if you can go during the Fringe, I really recommend it).
Do you recall if there were any female performers?
