I am making a over night stopover in Brussels arriving 6 30 pm leaving 10 30 am anything I could do or see and which place can I buy food so late ?

if you go in to Antwerp its about 30 minutes drive u have a lot of options

theres a nice restaurant in brussells by the EU called balthazar Rue Archimède 63 - 1000 Brussels Telephone: +32.02.742.06.00. theres a nice area to walk around at night around the manakin pis by centraal station with an awesome bar called delirium (has over 500+ beers available).

Many kosher places closed recently.

If you must have kosher food, come to Antwerp.

Otherwise stroll the grand place, i.e. main square etc, seeing some highlights.

There are trains from the airport to Antwerp takes around 35 minutes.

I land in Brussels at night and want to leave the following night to AMS via train. From friends, I heard that there is what to do in BRU, but from here it seems like you want to get out of BRU and a popular idea is to go to the castles in Ghent and Brugges. However, I have had a lot of difficulty pieces trains for that trip together - it seems almost as expensive as renting a car. Additionally, I couldn't find direct trains from BRU or ANR to AMS.

Has anyone actually done this day trip and can shed some light on how to best travel?

Yup, you can.
ask them if you could stop for a few hours, as there are many trains to Amsterdam starting in Antwerp.

I need a place near the train station that will be open on 17 Tammuz and that sells something that's easy to take away, like deli sandwiches or something. I want to just pick up food and then get on a train to Amsterdam, where I will eat once the fast ends.

You want some buffer zone.
