I was able to replicate it with a second email that is a forwarding address of my first. Don't want to post screenshots as it's my personal emails, but I'll describe the processes that worked for me.
I started a conversation between email 1 and email 3 with a few emails back and forth. Then, when responding from email 1, I had the option to click on the "From" section and to instead select email 2, which is a forward email of email 1. When the email arrived at email 3, it was part of the same string, and it was email 2, not email 1.
Note, that there was no option to click on "from" when sending from email 3, because there was no forwarding email associated with it. So this would only work if the scammer account is connected with one of the accounts on the chain.
Maybe there is another way, but this was one way that worked for me.
