For those of us who are not fluent in hebrew, can you explain what's going on?
Main points are that kashering commercial kitchen equipment requires a lot of knowledge and skill, and in many cases is virtually impossible. That many Mashgichim are not knowledgable enough in the complexities of the supervision, and that there probably isn't a sufficient number of mashgichim that would be required to do a proper job.
Kashering does not need to be done by the team which will be on site.
don't you just need experts to set the protocols?
