Filet mingion in kosher restaurants
« on: January 31, 2018, 12:02:19 PM »
Any foodies know if kosher restaurants in us serve real filet?  I was always told they don't do it in us but my friend says they have on menu in high class places.  I checked reserve cut and it says filet mingion with quotes around it- I am not sure if that means it's fake or just because it's a French word.

Quotes probably means it’s fake. Most American butchers call tournedos filet minion. In Israel there is usually an asterisks next to the item on the menu to show that they are using a piece of mean from the hind quarters

Apparently it's not specifically kosher meat that has this issue:
Quote from: https://en.wikipedia.org/wiki/Filet_mignon
The tenderloin runs along both sides of the spine, and is usually harvested as two long snake-shaped cuts of beef. The tenderloin is sometimes sold whole. When sliced along the short dimension, creating roughly round cuts, and tube cuts, the cuts (fillets) from the small forward end are considered to be filet mignon. Those from the center are tournedos; however, some butchers in the United States label all types of tenderloin steaks "filet mignon." In fact, the shape of the true filet mignon may be a hindrance when cooking, so most restaurants sell steaks from the wider end of the tenderloin - it is both cheaper and much more presentable.

Tournedos is barely available kosher in US as it is part of short loin.
A couple places to sell it, http://bisrakosher.com/ is one. Not sure of the hashgacha

Kosher filet mignon almost always comes from the ribs. It's also called medallion. It's basically the rib eye from the upper ribs

not a jewish cut
Most non Jewish butchers don't sell that as a specific cut. It's a cooking method

Doubt it. I don't think any major american hechsherim allow nikkur. OU definitely doesn't
