Which hotel is the closest to the airport on the strip that has a coffee bean and will be open after 10 pm?
The coffee bean located in the miracle Mile shops directly across the Bellagio closes 11. Fountain show and call it a day imo.

Fountain show is every 15 minutes from 8:00pm to 12:00am

that doesn't sounds too promising, i was thinking of going to the welcome to vegas sign and then to the Venetian. is that too ambitious?
If you want to go to the strip tell driver to take the back way and drop you off at Harrah's. Venetian is right there, Mirage across the street, Caesars and Bellagio are a short walk.

After that walk to the Bellagio hotel for the water show and if there is time get an Uber and ask to stop by the Welcome to Hollywood sign for a quick picture and continue to the airport.
Am I crazy thinking this could work?

Nothing unless you are going on the High Roller observation wheel or eating at Ruth's Chris. I would do this at night.
Harrah's is a nice drop off point to see things. You take Koval and enter the back way it is 13-15 minutes from the airport. Stay off Las Vegas Blvd.

Don't think Venetian has a back entrance. You want to stay off of Las Vegas Blvd. Mirage is a PIA to get in/out of.
Harrahs you enter in the back, walk through the casino and you are right on the strip. It is centrally located on the strip.

I believe all CBTL in Vegas except the airport have kosher food under Kosher LA. This is the full list from the kosher LA site.
