The Dont's
Don't play with the food on the grill. Flip it once (or twice if need be), that's all.

Be careful. Once your grill gets used you can have one heck of a grease fire and destroy your grill.
I singed my face as a 10 year old (but that was leaving fires on while closing tank valve instead of closing valve then lighting new fire to burn out excess)

What is the proper way to grill a burger medium well? Mine are either rare or dried out...

+1 meal mart. its fleishig and great on grill not directly on heat. right until its about to get burnt.

You shouldn't have to add fat to something that's already 20% fat

I do all my burgers at medium well for safety and if you're on top of it, they won't dry out. I use ground chuck and make my own patties. I also check with a thermometer and pull them at 155

Only way to eat that safely is sous vide. Anecdotal evidence does not contradict that.

I use that recipe on oyster steak but cut it down to 1/4 cups and omit s&P.
I like to make Oyster steaks with just salt, pepper and oil

I was always scared to try a thicker rib steak for fear that it will be raw or overcooked.  I made a 2inch cowboy steak last week and was just awesome! Lesson learned not to be afraid.  Just needs some tlc and thats it. And take it off a bit before you think it needs to come off
