The Dont's
Don't play with the food on the grill. Flip it once (or twice if need be), that's all.

Be careful. Once your grill gets used you can have one heck of a grease fire and destroy your grill.
I singed my face as a 10 year old (but that was leaving fires on while closing tank valve instead of closing valve then lighting new fire to burn out excess)

Smoked lamb riblets.

Two hours at 270
Glazed with Dijon mustard, honey, jam.
Up the temp to 330. After 15 minutes reglazed for another 25 minutes.
how do you control the temperature so exact?

Traeger pellet smoker. But I keep a temp Guage inside as well for accuracy

I would place it in the marinade and freeze immediately
AI thinks it's better to first refrigerate for a few hours

The salt is the best part ;)
I call it naked, Skirt steak is best as is left alone and served as a desert or side  ;) ;)
I'm seeing more and more about not using any wire or bristles to clean your grill. Though i'm seeing a new trend that you're supposed to use potatoes and onions to clean your grill. Is that a thing? Meaning does it actually work ?before I waste a potatoes and some onions cleaning my grill?
