The Dont's
Don't play with the food on the grill. Flip it once (or twice if need be), that's all.

Be careful. Once your grill gets used you can have one heck of a grease fire and destroy your grill.
I singed my face as a 10 year old (but that was leaving fires on while closing tank valve instead of closing valve then lighting new fire to burn out excess)

actually one huge difference is the honey to soy ratio. also no salt in this.  with salty meat i think it makes a big difference.  but otherwise it does look similar  but now you know its good on skirt steak ;)
Actually the ratio looks pretty close to me, a bit more soy sauce than honey. But yea, good to know. I can't imagine a meat that recipe isn't good on. It's a great one.

mix all ingredients and marinade for at least a half hour. grill on high heat for 3-5 minutes each side.
Have you ever tried letting it marinade over night?
I just found a new supply of forks!

I love skirt steak but I hate how expensive it has become. Used to be considered a cheap cut until it became so popular.

I will go with popular because it is a cheap cut. If it was delicious we would not need to marinade it.  ;)

You should keep in mind that kosher skirt steaks are extremely salty since they are salted as is in the small thin steak instead of as part of the larger cut of meat.

Yah, that is why we like it.  If you like skirt steak, can just oversalt any other piece of meat.
