The Dont's
Don't play with the food on the grill. Flip it once (or twice if need be), that's all.

Be careful. Once your grill gets used you can have one heck of a grease fire and destroy your grill.
I singed my face as a 10 year old (but that was leaving fires on while closing tank valve instead of closing valve then lighting new fire to burn out excess)

expression: a crane is as good as its operator

Meaning: with a crane you can lift heavy steel, if you know how to use it, you cant just down down in it and start complaining it doesn't work

Question: a grill is the biggest scam in history, or I just don't know how to use it  :o

Story: Finally I bought a grill and what ever I put on comes out dry like paper, what am I missing here?

I believe a grill was invented after this stroy,
husband: "okay I want to help you out with the cooking"
Wife "out of the kitchen"
Husband: "sure no problem I got a grill"
+1 for the tip about not flipping

Also I think bbq sauces will often cause things to dry out faster. For chicken a marinade works best and for meat just a spice rub (or salt n pepper, Montreal spice mix

tried some potatoes and onions, peppers, chicken strips, squash

Like mentioned above - Try flipping the food as least as possible.

Google can be very helpful in getting some great grilling tips.

If the food was dry that means it was over cooked, try lowering the temperature a little and experiment.

you answered your own question. Invest in a meat thermometer and don't crank the heat up to max. There's skill involved in grilling, just like all other forms of cooking.

No I wasn't
I had all 3 burners on the highest for about 10 minutes (I didn't set a timer) I went to check the temp on the hood it was 600

Depends what im grilling -  When grilling steaks i'll open it once 5 minutes in to flip it. If its dogs I'll open on high heat i would open it sooner to roll.

No need to get the temp that high. An average rib you can have the grill sit at 450-500 and flip 4-8 minutes depending on thickness and your preferred cook.
