FCO is actually a good choice. They have plenty of Shabbos restaurants and kosher options there.

Landing in FCO with less than 2 hours to Shabbos isn't a decent choice. They could have landed in FRA, LON, PAR or maybe even Basel, Zurich or Vienna, where there are more established Jewish communities, and they should have made an effort to land in a place that gives more time between actual landing and Shabbos.
