Anyone been to Beirut? Or anywhere else in Lebanon? Can I get in to the country with a US Passport (no Israel stamps) even with my Very Jewish Name?

I've never seen a policy with such an exclusion.

Most insurers are likely to postpone an application with a trip to Lebanon disclosed. But things do sometimes slip through. Alternatively there might be a simplified underwriting application (for smaller amounts) that doesn't ask travel questions.
I've been waiting over 5 years with bated breath for someone to say that!

Why do you think there are Jews there now? Or that they would want to talk to you? Most (perhaps all) left in 82.
If you go in as an American and you tour the country, especially if you have a local guide that you can trust then you will be fine. If you start looking for Jews, you will be in the hands of Hezbollah in no time. How they will react can be unpredictable. I would strongly advise against going. There are so many Muslim countries you can visit with little risk. Lebanon is an unstable place. Definitely don't look for Jews there. If there are - I am sure there are some - they will not advertise themselves as such.

When Israel stamped the passport you were able to get a 2nd one if you needed to travel to a country that wouldn't let you in with an Israeli stamp.

I have two friends (US citizens) that tried to go there and were detained and interrogated for 12 hours in the airport before being sent back home, they were told they are a security threat. They were wearing Chasidic garb. This happened last year. I don't remember all the details off hand.

And you know that they are real and it's not a trap? If they are real what would be the reason that you can't meet them in Cyprus or another neutral territory? Anyway, you shouldn't answer this question here but to yourself.

If you know for a fact that they are real because, for example, you went to school with them in Paris, you trust them and they are inviting you, that's a different story. Still, Lebanon is like skating on thin ice.
