Wood
Pros: Cheap
Easy to change shape or size as your needs for space change
DIY - most people would be able to build it from scratch or make modifications (e.g. add windows)
Can be converted to chazzon ish (replace metal screws with peg screws)
Can integrate a schlock to the structure
Cons: Heavy, Can warp over time. (note: if you use enough fasteners and are also careful to assemble it balanced this can be minimized)
         Needs lots of storage space

Fiberglass
Pros: Easy Setup (on level ground)
Length/width is reconfigurable (you just need to buy a few 2x4 beams if you change layout)
Cons: Expensive
Greenhouse effect on hot days (need to budget for several open/shut windows)
Connection threads can become bent even with proper storage (need to budget for the odd panel replacement here and there)
         Can Crack or Break

Canvas
Pros: Setup in minutes
Cons: Not accepted by all poskim
         Poor protection from cold Weather
         Wind Can be bothersome.

Some of those sukkah's have unique pieces that if you lose even a small piece of them it maybe very costly to replace them, so check before you buy.

Any sukkah which was used already (so everything has been figured out and adjusted to exact fit) should be up rather quickly.

Plastic panels are not strong. They will last a couple of years not more, specially with kids around. Fiberglass panels are much stronger and will last for decades IME.

I built my own a bunch of years ago. Got wood boards and made them into panels with 2x4s.

I bought large Eye Bolts

and screwed 2 into the 2x4 on one side of each board sticking out toward the next board. To meet it I sawed (or drilled) out a tall (vertical) oval hole.
Slide the boards together with the eye bolts wide section aligned vertically to just fit through the hole, then once through the hole, turn it 90 degrees so that it is now horizontal and won't fit back through the vertical hole!
