Wood
Pros: Cheap
         Easy to change shape or size as your needs for space change
         DIY - most people would be able to build it from scratch or make modifications (e.g. add windows)
         Can be converted to chazzon ish (replace metal screws with peg screws)
         Can integrate a schlock to the structure
Cons: Heavy, Can warp over time. (note: if you use enough fasteners and are also careful to assemble it balanced this can be minimized)
         Needs lots of storage space

Fiberglass
Pros: Easy Setup (on level ground)
         Length/width is reconfigurable (you just need to buy a few 2x4 beams if you change layout)
Cons: Expensive
         Greenhouse effect on hot days (need to budget for several open/shut windows)
         Connection threads can become bent even with proper storage (need to budget for the odd panel replacement here and there)
         Can Crack or Break

Canvas
Pros: Setup in minutes
Cons: Not accepted by all poskim
         Poor protection from cold Weather
         Wind Can be bothersome.

Not so simple to eat on the grass on shabbos or yom tov.

Well you can just eat on your deck and forget the religious stuff. Putting up a succah kind of gets into religion. Eating on the grass on sukkos is a potential  major halachic problem and putting down material to solve the issue can damage the grass which is the op’s issue.

That looks super flimsy for a 10x20. You might end up throwing it away after 1 day.

If it is for just one yesr then buy some 1/2s or 2x3s from HD to make a frame including lavud up to 10 tfachim and then get some cheap fabric.

If you're willing to put in the extra time to DIY then I think you can do better, especially if it's just a 1-year thing. If you're just looking for 3 sides and no door (like the one you linked) I imagine you can build a simple frame of 2×4's and plywood for half that price.

That price on Amazon doesn't include schach btw.

Anything that'll let air through it that is kosher? https://www.homedepot.com/s/tarp?NCNI-5 I assume a tarp will work, but will likely be very hot down here in FL with a tarp as a wall.

According to many poskim (most? all?) the fabric is never really kosher as the wall.
Get a plain thin fabric from Hobby Lobby or Michaels etc.
Or you can use latice from HD

The lattice idea is great for FL, but it might be a little more involved and more costly. You have to build out a frame either way, likely out of dimensional lumber.

If you do the lattice, they sell 4x8 sheets, so you basically need to make a frame where the vertical studs are 4' apart, and then put in however much additional framing/backing (possibly out of smaller dimensional lumber) within each 4x8 space to make it as sturdy as you'd like - but you don't need to build for lavud as the lattice helps form the wall.

If you do tarps (or any other fabric), you should plan for the frame you build to be the kosher wall. You might be able to place your studs farther apart (say 60" or 80" apart instead of 48"). You can then run 3 strips of 1x2 material horizontally from stud to stud, starting from the bottom of the frame, each just under 3 tefachim above the last. This will give you less than 3 tefachim between each strip for lavud, and a total of more than 10 tefachim from ground to the last strip (including the dimensions of the 3 strips of 1x2 material placed flat so that the 3 2x's add to an additional 4.5") for a kosher wall. At that point whatever you hang on the walls is for privacy/wind/shade etc, not for the kashrus of the sukkah.

I hear. Don't have experience with lattice myself, but I would imagine that on a 20' wall, you need more than just 4' on center framing with lattice screwed on.

Interesting. Does anyone actually pasken this way l'maaseh (ie to make sure your straps are lavud even acc to R' Chaim Noeh, while your wall is 10 tefachim even acc to Chazon Ish)? I know it wouldn't be a raya, but do the canvas sukkah's come with 3 strips or 4?
