Which card to pay for High Holiday spending? Israel

Going to Israel and staying in Hotel... restaurants and renting a car...
I have most of the cards...(platinum, jp morgan reserve etc.. including business variants)
Hotel reservation is not through any cc program...

Which card should we swipe at checkout? and restaurants and rentals...

I don't have that much experience. If it was me I'd stick to cards that have the most protections. I wouldn't prioritize earning points.
