would love info on best places to stay for family of 9,
where to spend shabbat for minyanim,
how to manage with kosher food

If you want reliable minyanim, the closest is probably Silicon Valley - San Jose or Palo Alto (we spent a Shabbos in each). We brought all our food with us for our time in Yosemite. For lodging, we wanted to be in the valley to beat the crowds and enjoy early and late photo opportunities. So we stayed at Yosemite Valley Lodge, which can't be beat for location, but could get expensive since you'll need (at least) 2 rooms per night.

We were in Yosemite this summer (August). Rented an RV which slept 7, cost around $1000 + $200 or so for mileage + gas. Sites in the valley are cheap (around $30 per night) but you need to be ready within a few seconds after registration opens around 5 months before.
Brought almost all food with us, you can buy essentials (eggs, milk etc) in the park or in one of the villages on outskirts.
Chabdad in Fresno should have minyan I think - but check with them. They also offer kosher meals service, which we did not use as was fairly expensive. It is closest Chabad to both Yosemite and Sequioa national parks.
Yosemite is wonderful, you'll have a great time.

We rented from apollo - https://apollorv.com . Picked up in LA, returned in SF.
Was very happy with the van and service.
We were 2 nights in Sequoia, 2 in Oakhurst (just outside Yosemite - Shabbat) then 2 in Yosemite.

We spent around 48 hours in Yosemite, arriving from the east (Mono Lakes, Bodie Ghost Town) and driving through the park, and spending 1.5 days in the valley, leaving midday Friday to get to Palo Alto in time for Shabbos. We spent about 2.5 weeks in NoCal altogether, flying into Sacramento and out of SFO (no issues or surchages for 1-way rental).
