My Google pixel gets updates 2 years later that improve it and make it more functional, yet it cost me $800 when I bought it, and it costs $200 now.

This is hypothetical by the way. I don't own the original Google pixel.

Phones get slower and laggier with every update.
I've yet to experience that on the Model 3. In fact the opposite is true, my car can now go faster and accelerate faster than the day I got it due to software updates.

Obviously it's not worth more money. But it's more valuable to me.

Right. But more valuable to you does not mean that it appreciates (in general) instead of depreciates.
