Flights, Hotels & Car Rental pricing

I always had this question in mind. Why is it that only flights, hotels and car rentals are priced to fluctuate as apposed to other in demand products or services that have a set price based on the season? Why cant they just set a flat fare for each season or day of the week like all train and bus tickets around the world?

Supply and demand are not a factor because if it was then airlines would operate more flights to fill in with the demand. Also MANY items have supply and demand and do not fluctuate like these.
