I just searched for tickets in February from NY to TLV and found for $531 on Norwegian Air International with about a 2 and a hour stopovers in Rome both on way there and on the way back.  Dates seem to be mid-January to mid-March.  Sample itinerary: Departing Sun, Feb 10 at 11:15pm from Newark, 2 hour 40 minute layover in Rome, arrives at Tel Aviv 7:55pm on Monday.  Return trip departs Tue, Feb 19 at 12:20pm, 2 hour 35 minute layover in Rome, arrives in Newark 9:30pm.  Bookable on Norweigian.

I see for as low as $525. Sample dates: Sunday, Jan 27 - Tue, Feb 5.

I now see as low as $517. Sample dates: Depart Tue, Feb 19 and return Thurs, Feb 28. 

The fares range from $517 to about $560.  Dates seem to range from about mid-January to mid-March.

Now I see this is a low-cost airline.  Doesn't come with checked-in luggage or meals at this price.  Just a hand luggage.

Book in NOK on Norwegian.no and it comes out even cheaper (make sure to use a no-Forex card).

Two interesting angles here: cheap ($200) one-way revenue fares without having to fly WOW, and premium roundtrip (similar seat to domestic F) starting at $1100 when paying in NOK

Issues booking in NOK? I've done it before without a problem, just make sure you're calculating the rate properly, using a card that won't rip you off in forex rates/fees, and that you're purchasing what you want (the .no site is only in Norwegian, so use a browser that translates or something).
