Generally they use the 787 which as Dan has written repeatedly is actually worse in coach, older planes (the likely candidate in this case) generally have more legroom and are better for coach. As far as in flight entertainment and service that's another story...

Not in this case. Economy is 2-4-2 layout on 767.
