tag says they can remove the wifi from Nintendo switch lite. But I dont think it has a browser so what are some of the dangers of keeping it as is with its wifi

 If TAG removes the wifi capability permanently can you still play games because now some have told me that it sometimes requires you to update the games*even with the game disc inserted) which will be difficult without wifi?

No experience with the Switch. However, I am aware that from the firmware update age (3DS and on), there have been games out that required a certain firmware version or later in order to run. This would explain the experience on Switch that you describe above - getting a new cart that would not run without connecting to the internet and updating. Although it is possible that games themselves demand updating (such as when the version on the cart has a horrible bug of some kind), there is no way that an offline Switch would know that, lechora. But I don't know this for a fact.
It seems clear that the Switch is at the end of its life - reliable sources are asserting that an updated version is on the way.
Option one would be to update a Switch to the latest firmware and resign yourself to the POSSIBILITY that newer games will not work. Again, if my theory is correct, which I don't know.
Option two would be to look into the possibility of updating the firmware offline. This would almost definitely require some kind of hacking of the software. If this is doable (I have no idea), you should be set regardless.

Consider getting an older handheld, perhaps with a cart preloaded with games. In IL, there is a thriving market for these because the games can be preselected and the device lacks the internet.

the problem with older handheld games is that todays kids frown upon these as they lack the fun and graphics of the Nintendo switch and PS4 quality etc..?

Switch and PS4 are not the same quality, though...
Depends what they were exposed to already. Nintendo hasn't focused on graphics quality versus gameplay in several console generations yet they are thriving.

NDS is simpler and cheaper. 3DS if you know what you are doing, also possible.
