Grind it as close to Seder as possible.
Store it in a airtight container (glass is better then plastic).
Freeze it until right before Seder.

ETA: If freezing it, there's really no need to grind it as close to Seder as possible. The freezing will lock in the freshness.

Most don't use just horseradish. Some use just lettuce. But many eat both. Some eat together. Some eat the two separately, most don't.

No. Saw in Sefer that most Poskim hold lettuce is preferred way of Maror. Some poskim argue and say that since today's lettuce isn't sharp should use horseradish. Many use both (myself) and some poskim say they should be done separately.
